Black Bean, Tomato, and Corn Chili
Makes 6–8 servings
Prep. Time: 10 minutes Cooking Time: 4–6 hours
Ideal slow-cooker size: 4-quart
2 15-oz. cans black beans, drained and rinsed
14½-oz. can Mexican stewed tomatoes, undrained
14½-oz. can diced tomatoes, undrained
11-oz. can whole-kernel corn, drained
4 spring onions, sliced
1 small green bell pepper, chopped
2–3 Tbsp. chili powder
½ tsp. ground cumin
½ tsp. salt
2 cloves garlic, minced
15-oz. jar queso, for garnish
2 spring onions, sliced, for garnish
1. Combine all ingredients except the garlic and garnishes in your slow cooker.
2. Cover. Cook on Low 4–6 hours.
3. Fifteen minutes before the end of the cooking time, stir in the garlic. Cover and continue cooking.
4. Garnish each bowl of chili with a dollop of queso and a sprinkle of spring onions.
